Ingredients
1lb Baby Potatoes, skin on
3 Bacon strips, sliced into small strips
1/2 Tbsp Steak Rub spice blend
1/2 Tbsp All Purpose spice blend
1 cup Cheddar Cheese, shredded
2 Green Onion stalks, chopped
Sour Cream, for garnish
Kosher Salt, to taste

Preheat oven to 375 degrees Fahrenheit. Set a cooling rack inside of a cookie sheet and place potatoes in an even layer onto cooling rack. Bake for 45 minutes to an hour, or until potatoes are done.

While potatoes are baking, heat a frying pan on medium heat. Add bacon and season with All Purpose blend and fry until desired doneness. Remove bacon, set aside and reserve bacon fat.

Once potatoes are done, remove from oven. Use a potato masher to smash potatoes down about a half inch in thickness.

Season both sides of potatoes with Steak Rub & All Purpose.

Add a drizzle of bacon fat back to the pan and heat over medium heat. Place potatoes in pan, making sure not to overcrowd them. Brown on each side until crispy.

Once all potatoes have been browned, top them with shredded cheddar cheese and bake in the oven on 400 degrees Fahrenheit until melted.

Remove potatoes from oven and garnish with sour cream, bacon and green onion. Sprinkle with kosher salt to finish and enjoy!
