Smoked & Smashed Potatoes

A.K.A. "Double S" Potatoes. These smashed potatoes give you the best of both worlds, the fluffiness of a baked potato and the crispiness we all love in a French fry. Bacon makes everything better, right? So we made sure to take full advantage by not only using the bacon as a topping but also reserving the bacon fat to brown the smashed potatoes. We mean this in the most humble way possible, but no other potato recipe compares to our Smoked & Smashed potatoes. Our Steak Rub & All Purpose spice blends are the perfect accompaniments to the smokiness in these spuds; we even seasoned the bacon with All Purpose for added flavor. We used a stovetop smoker and a mix of Oak and Hickory wood chips to impart the smoke taste. Not everyone has a smoker, so we adapted this recipe for the oven; our Rotisserie Chicken spice blend would be an amazing smokey addition to this recipe. Ingredients

1lb Baby Potatoes, skin on

3 Bacon strips, sliced into small strips

1/2 Tbsp Steak Rub spice blend

1/2 Tbsp All Purpose spice blend

1 cup Cheddar Cheese, shredded

2 Green Onion stalks, chopped

Sour Cream, for garnish

Kosher Salt, to taste

Steps

  1. Preheat oven to 375 degrees Fahrenheit. Set a cooling rack inside of a cookie sheet and place potatoes in an even layer onto cooling rack. Bake for 45 minutes to an hour, or until potatoes are done.

  2. While potatoes are baking, heat a frying pan on medium heat. Add bacon and season with All Purpose blend and fry until desired doneness. Remove bacon, set aside and reserve bacon fat.

  3. Once potatoes are done, remove from oven. Use a potato masher to smash potatoes down about a half inch in thickness.

  4. Season both sides of potatoes with Steak Rub & All Purpose.

  5. Add a drizzle of bacon fat back to the pan and heat over medium heat. Place potatoes in pan, making sure not to overcrowd them. Brown on each side until crispy.

  6. Once all potatoes have been browned, top them with shredded cheddar cheese and bake in the oven on 400 degrees Fahrenheit until melted.

  7. Remove potatoes from oven and garnish with sour cream, bacon and green onion. Sprinkle with kosher salt to finish and enjoy!
